    My mom got my dad an electric smoker for Christmas and they have been experimenting around with it and everything that comes out of it has been fucking amazing they did whole turkey breasts, salmon, ribs, and a brisket so far.

    My next smoke is probably going to be a beer in the butt chicken. I would like to try a whole turkey eventually.

    The butts went on about 1 hour and 40 mins ago. Pictures to come (yes, Im lame, I take pictures of my meat when no one is looking.)

    I rubbed them in mustard and my rub last night, then applied another thick coat of rub this morning.
    Im making a BBQ sauce, and some honey mustard now. this stuff is soo much better when you make it yourself. I have been looking for years (litterally, my father refers to me as the condiment king) for a good bbq and honey mustard and I'v yet to find it. Making it myself I'v got alot closer to what Im looking for.

    Home made bbq sauce only gets better the longer you hold on to it. All the flavors meld and mellow a bit.

    The butts after sitting over night with the mustard/rub, then another coat of rub


    BBQ sauce:
    Oil, onions and garlic cooking on low:

    (yeah I use Rachael Ray pans, whatsittoya)

    Bourban, mollases , raw sugar, cider viniger


    Burning off the booze


    Everything else added and simmered for ~30 mins


    And this is mostly what I used...I added a few things including worcestershire, and cumin on top of this

    I know its not very big outside of the Carolinas but you should look into a vinegar based sauce and a mustard based one.

    Im going to tinker around with sauces eventually. Some more basic ones, "golden" and whatever else. So far this one tastes really really good though. I dont REALLY like chilli or cayenne, so I needed to change it up quite a bit to kind of mask that.
    Around here we just really dont go for that red pepper stuff...Whenever Im in TX I can barely stand the beans and some of the seasonings.

    My brother grows jalapeno's, habeneros, and pretty much anything else he can so I will probably do more sauces based around those once they are going (which will be 6-8 mo's from now).

    Im going to be putting the sauce in an aluminum pan 90% covered w/ foil in the smoker for a bit. The recipe I based my sauce off of called for liquid smoke, and I just really dont like liquid smoke...This will get a nice smokey flavor that wont taste artificial or overpowering.


    Im also going to be doing some smoked, meaty beans that are close to a local favorite. I became friends with a "local bbq legend" and he gave me a lot of tips, including his signature beans...Or atleast a Do it at home version. He learned from Sonny Bryan.



    The butts currently, 4.5 hours in.

    ooohhhh, missed that

    If you want good smoke flavor and a spot of heat, use fresh chipotles. They have some of the best flavor I've tried in smoke and a decent heat to keep it going.

    Mmm I've already had two pull pork sandwhiches today from my leftovers.

    I love smoking. I think I may make it a weekly thing now that I have a dedicated smoker here.
