    Smoking [everything]

    After alot of searching, I decided to buy an electric smoker, and eventually build a barrel smoker with a hot box on the side.

    This is the one I went with:


    I mainly decided to with this one because its insulated. it was -15 today, and I was able to keep a totally consistent temperature on medium heat.


    My first smoke:
    Bone in chicken breasts, bratwurst, Pork tenderloins beef arm roast, bacon wrapped, cream cheese and cheddar stuffed jalapenos, tiger shrimp.










    The thermometer is in the door of my smoker and it was reading way low because of the temperature outside... I ended up cooking it way hotter then it was reading (probably around 315-350, instead of ~250, it was reading 190)


    I ordered this:

    Dual probes, ones for internal temp, the other is for internal meat temp. It has both the "on board" thermometer, and the wireless which displays both temps. It also has alarms for when it gets too cold or too hot.

    BUT, its not here yet and its on backorder, so I bought an oven thermometer until it shows up.


    Our supermarket had butt roasts on sale for 98 cents a pound, so I bought about 20 pounds. Spare ribs were also on sale.

    I made a modified basic rub, and gave the mustard covered meat a coating last night and let it sit.



    got up at 8, started the smoke


    I put the butt roast on about 3.5 hours before the ribs

    This is after ~6.5 hours @245* on the butt, 3 hours on the ribs


    This is at 7.5 hours on the butt. I put a bbq sauce on the ribs, and smoked for another 30 mins


    The internal temperature of the butt was 205 so I pulled everything out, wrapped it in foil, threw it in a small cooler and wrapped it with blankets.


    After the cooler, I pulled the butt
    (this was after it was already picked through, so about 60%)

    I smoked it with about 80% hickory and 20% maple.
    I restocked the water and smoke about every 2.5 hours.

    Usually you want a hard wood (and maybe some fruit wood) for red meats, and fruit woods for poultry.


    It was very very good.
    Pork butt (shoulder) is really forgiving, although I was able to keep a super consistent temperature and follow "the rules" pretty close.

    Im probably smoking for my brothers wedding so I want to spend alot of time finding the right stuff. My brothers fiance is Japanese so her family is coming here from japan and they want to do some Midwestern food along with some of her things.
    So far, it looks like Im going to do a couple big butts for pulled sandwiches.

    I got this one at Menards (which originated here) for 169. I was planning on ordering one off amazon, but these things seem to be really hit or miss. I was really looking into a propane model, then I saw it in a store and it was just garbage. This one just has a really nice feel. The magnets in the door hold it pretty nice, its insulated, and its pretty solid. The price was really good too...
    Although I dont know how long it will last, at this point I would certainly recommend it to another beginner.

    The "wsm" or Weber smokey mountain seems to be the favorite for a compact charcoal smoker. If im going charcoal, I would build one. I found a guy in town who is able to get food grade barrels a while ago. Im going that route for my second smoker (the one that will be at the cabin)

    Holy shit that looks so god damn tastey... My dad has a similar smoker that he uses on EVERYTHING and it comes out amazing.. I'll ask him tomorrow what kind it is

    Your supposed to wipe it down, but with it being so damn cold out (it was -22 yesterday) by the time its cooled down enough to stick my hands in there its just solid.

    I clean the water and smoke trays. They get like a quarter inch of goop on them and its just BLACK grease.

    You want to get it greasy inside though, otherwise it says it could rust. Before i used it I had to spray the inside with vegatable spray and bake it on for 2 hours, you want to treat it kind of like cast iron I guess.

    Congrats Pac, sooner or later you're gonna have to make the jump to charcoal and let me tell you it makes all the difference. But nothing beats the ease of an electric smoker.

    Yeah Im building a barrel smoker this summer to leave at the cabin. I found a guy who sells food grade barrels (both plastic and steel) for $5 a piece.

    My friend has a really nice researched example Im going to copy. Thats what got me really excited about smokers a few years ago, but hes one of those guys who thinks he knows everything, and knows how to do anything...but not so, at all.

    ...tightly wraps everything in tin foil and heavily coats it in coarse sea salt


    Meaning, zero smoke, zero temperature control (I dont think he even owns a thermometer) so on and so forth. Litterally some of the worst meat I'v ever had.

    I think I may go the same route, right now I have a modified Brinkmann smoker which I modified into a clone of the weber mountain smoker. but a BDS might be in the plans for when my living situation settles down.
