Yeah I know. When I saw the other links that people were posting from Amazon it made me realize how awesome a deal we got.

I am also noticing that I can't find our set anywhere. Maybe it was discontinued or changed and that is why they were so cheap.

that's the closest, but the knives are different too. No 5" serrated, add 6" utility, and the santoku is different as well. The block is also set up slightly differently.

That is our standard utility knife. We have had it for a few years, and it gets tons and tons of use and abuse. there are 6 people using it, pretty much all of the time.

I keep my wusthofs hidden away for my own personal use, but that Analon knife has been really great. I would probably buy another just to have it around.

The best thing about the Anolon knives is that it's well liked by a few of you guys and the price is fantastic!

You don't get too much better than the Anolon knives for their price.

I personally bought a 10 or 12 piece Ginsu set a couple of years ago at the Berkshire Hathaway annual meeting, they were about $25 if I remember right. I know they are not the best knives but at this price I am impressed. If they get dull you just toss them and buy a new set the next year.

I about bought a Damascus steel knife the other day on Amazon because it was about 75% off but decided against it since im in a saving mode right now. I have always wanted one and hear they are great because of the different layers of steel wear at different rates so its always sharp.

So I couldn't wait and went to BB&B to pick up a new knife. Decided on the Henckels Twin Four Star II series 8" chef knife. $129.99 and came with board and trivet. The GF bought it for me for an early anniversary present

Here is the knife with the honing steel and free cutting board and trivet.

    the knife up close.

Ya im sure its not hand made Damascus like the good stuff is but for the price I was willing to try it. The brand is pretty well respected. http://www.amazon.com/Shun-Steel-2-I...305594&sr=1-53

I think I would trust that Shun would follow the tradition. I want a Ken Onion chefs knife so badly.

Nah Shun "Damascus" is just fake sand beading. the steel that Shun uses can be had for a lot less by other Japanese makers.

Ah, it would appear that they have a Damascus look and are actually cut from a roll of steel, flat ground down to a "v" then blasted with glass beads.

I was really hoping that a jappo dude was sitting in all white, folding the steel for my knife and then shaping and sharpening it out by hand. This sucks

Here's some nice priced real demascus blades that use VG-10 steel (the same as shun). http://www.japanesechefsknife.com/SH...cusSeries.html

This website has a lot more Damascus stuff as well and a lot of other great knives. Sadly they all have the typical right hand Japanese bias so that means I'm not buying any of then :/

@rmpotsy yea mean, you know looking at the knife online gives you a boner, then thats the right knife for you. tried it out yesterday and it fucking rocks.

2 questions- You handwash yours right? And do you use the honing steel on yours?

If we are on the subject of sharpening; I sharpen my knive about every month (maybe more if I'm cooking alot and am bored).

I use whetstones, in particular these: http://www.japanesechefsknife.com/Wh...esForSale.html

Takes some practice at first but once you get good you can start profiling your edge to how you like it.
