make sure you practice the sharpening steel on another knife cause you don't want to fuck yours up with the wrong angle. It takes a little practice before you get it right. And when you get it, it comes razor sharp.

Will do, any videos on proper technique? The chefs knife I use now is a piece of crap that my mom bought as a part of a cuisinart set so this is a huge upgrade.

generally on a chefs knife you are looking for a 20 degree angle. the way it was explained to me is you want it to look as if there are two imaginary dimes in between the blade and the steel.

I'm sure you will need to at some point even if you are using a steel.. the steel just increases the time between sharpenings

I have the pro S set and I couldn't be happier. The difference between our pro S and our twin (pretty sure it's the twin, whatever is the henckel's step below pro S) is noticeable.

You can get a set of pureKomachi for a reasonable price. They're great, too.

    I use Messermesiter.

Just got that puppy off of Gilt Group for $6.95. I had a random-ass $25 dollar credit and it was $24, it retails for $48 so I'm content

I don't even know where the $25 dollar credit came from. But I've seen a couple great knife sets go through there before.

What is the purpose of that knife? I've never really seen one shaped like that.
